The simple method, demonstrated elsewhere on Youtube(simply start at the head and slice cleanly along backbone) worked wonders for me. Clearly this method works for you, but even with your experience it takes you twice as long as rookie me using the other method. Thanks for the post though!
I do and I will try … I do and I will try to post soon. Don’t get me wrong, he did fine, as it is really hard to take the pin bones out. It takes a really sharp and stubby knife to do it, and then there is really no guarantee you got them all, but usually you do.
Simply take the knive, find the start of the pin bones with your fingers, draw the knife down the row of bones, but remember to take the knife all the way to the skin on both sides, then use your index and middle finger to scrape the pin bones out. Gud luck

makes it look a … makes it look a little tricky, there is an easier and quicker way. And it is even quicker with the guts in. Takes about 30 seconds to do 1 trout . We call this type of cut a butterfly. However you are on You tube and not me.
technically lake … technically lake trout are trout… at least in the same way that bull trout, brook trout, splake and tiger trout are trout. (technically char but still a member of the salmonid family)

i have fillet’d a … i have fillet’d a lot of fish, and this is the most presentable way of serving the whole “trout” supper concept. The fish are still percieved by the diner a “fresh”, and the skin on gives the final dish the “wild” and exotic presentation. Great job man! Not just about the fillet, but the whole meal!
actually he’s got a … actually he’s got a point but it depends on whether you would rather have just the meat or would rather keep the skin on. start from the head and work your way to the tail while lightly brushing the bones with your knife. you do tend to lose a little meat when doing this though. again, its dependant on preference, neither is wrong.
